In addition to their undeniable importance for industry, natural plant products are widely used in the production of functional food, which, in addition to satisfying nutritional properties, also exhibits certain pharmacological and physiological effects on human health. Chokeberryfruit and products are considered to be excellent sources of polyphenoliccompounds. A large part of polyphenolic compounds from aronia berriesis found in the juice, but the flesh of the berry that remains behind in the juice production process is also richin these bioactive compounds. The aim of the conducted research was to examine the antioxidant potentialof thechokeberry juices from Bosnia and Herzegovina.The antioxidant potentialof chokeberryjuicesin this study wastestedbythe ferric reducing antioxidant power(FRAP)andtotal phenol content (FC). Tests were carried out in other juices for the same parameters in order to compare the obtained values.The research results show that the values of FRAP and total phenols in chokeberry juices vary (20-63 mmol Fe II/L; 850-4930 mgGAE/L), but are significantly higher than in other analyzed juices (7-25 mmol FeII/L; 220–1265 mgGAE/L). By comparing the content of total phenols and FRAP values in pasteurized and unpasteurized chokeberry juice samples, it can be concluded that they are higher in the sample prepared by the pasteurization process. Statistical parameters showthat thelinearcorrelation between thetotal phenols and the FRAP valuesof chokeberry juices (r=0,964; p ˂0,001) and other analysedjuices (r=0,960;p ˂0,001 ) isstatisticallysignificant. The research includes analysis of: pH value, organic matter content, and the total concentration of manganese in eleven soil samples from different localities northeast of Bosnia and Herzegovina. Sequential extractions of soil samples were also performed to determine the content of some form of binding manganese. Concentration of manganese in the flowers of calendula were also found and tested at these sites. From the obtained measurement, BCF (Bioconcentration Factor) values were calculated for the tested metal. Soil pH had values from 7.84 to 8.54, which puts them in the category of alkaline and strongly alkaline soil. The total concentration of manganese measured in soil samples do not exceed the limit values or are above average values. In the analyzed soil samples, the minimum content of manganese in the exchangeable fraction and the largest in the residual fraction and bound for oxides of manganese and iron. The concentrations of manganese in the flowers of calendula have not exceeded the permitted value. Statistical analysis of the results showed a weak linear correlation between pH value of an aqueous solution of the soil and the content of manganese in the flower, and linear correlation between manganese in the exchangeable fraction and the content of manganese in the flower. The calculated BCF values are very low and suggest that calendula growing on alkaline soil hasn’t got an expressed potential for accumulation of manganese.

Uvod i cilj: Crna vina sadrže različite spojeve koji se odlikuju visokom antioksidacijskom aktivnošću. Najznačajniji antioksidansi grožđa i vina su fenolna jedinjenja. Fenolne komponente iz vina su opće prihvaćeni antioksidansi koji imaju važnu ulogu u održavanju ljudskog zdravlja i prevenciji raznih bolesti zbog mogućnosti sprečavanja aktivnosti slobodnih radikala. Na sadržaj antioksidanasa u vinu utiče porijeklo sirovina (grožđa) kao značajan parametar pri određivanju kvaliteta vina kao i nacin proizvodnje samog vina. Metode: Ovim istraživanjem određen je ukupni antioksidacijski kapacitet crnih vina indirektnom FRAP (Ferric Reducing Antioxidant Power) metodom uz FeSO4 x 7H2O kao standard. Istraživanjem je obuhvaćeno ispitivanje antioksidacijske aktivnosti uzoraka vina. Rezultati: Najveću vrijednost antioksidacijske aktivnosti pokazao je uzorak vina Postup Vinogorje Pelješac (a=62,77 mmolFeII/L dok je najslabiju antioksidacijsku aktivnost pokazao uzorak vina individualnog proizvođača sa područja Kalesije (a = 10,54 mmolFeII/L). Zaključak: Crna vina sa područja Bosne i Hercegovine predstavljaju značajan izvor antioksidanasa.

Positive health effects of integral cereals consuming is attributed to bioactive substances. This research is conducted to test antioxidant water extract capacity of different kinds of cereals, compared to the values of total phenols. The total antioxidant capacity was estimated by FRAP assay. The total phenolic content was measured by Folin-Ciocalteau assay. Antioxidant capacity amounted 50,04–385,71 μmol Fe II /L of extract, and values of total phenols 2,95–20,35 mg GA equiv/L of extract on 20°C. The increase of temperature reaction (40°C) resulted in increased content of total phenols in extract and higher value of antioxidant capacity in all extracts. There was significant linear corelation between total phenolic content and FRAP.
